This position is responsible for all aspects of front-of-house operations and floor management, including; food, beverage, equipment and property to facilitate the fulfilment of the Edgewood service experience, financial goals and company initiatives. The Bistro Manager motivates, coaches, instils accountability and achieves results to drive success at Edgewood Tahoe. Essential Functions:

  • Supervises and motivates the Assistant Managers and staff in order to provide a high standard of service for guests.
  • Plan, develop, and direct daily operations. Forecast and analyze sales, labor, and profit; and, ensure compliance with established budget. Schedule, supervise, and participate in the operational duties specific to the unit.
  • Recruit, supervise, train, schedule, discipline, review, and direct Bistro management and staff.
  • Maintain accounting records, daily reporting requirement, and cash control. Manage P&L statement.
  • Respond to guest inquiries and resolve guest complaints.
  • Maintain and ensure safe facility environment including standards for maintenance and upkeep of equipment, food handling, cooking, housekeeping, sanitation, dress, cash control, and employee hygiene. Notify proper Edgewood departments of all unusual events, circumstances, or other safety or quality control issues.
  • Act as Company's point of contact with guests. Represent the company in a professional and positive manner at all times. Maintain and enhance the company's image when interacting with clients, guests, associates, and vendors.
  • Understands and executes the guest experience model: guest expectations, service and engagement
  • standards, training and guest experience.
  • Ensure full compliance to Food and Beverage operating controls, SOP’s, policies, & procedures.
  • Makes sure the line of communication with the Management team is fluid between shifts.
  • Oversee the dining room operations, supervises staff in accordance with Edgewood policies, procedures and standards.
  • Creates a positive team atmosphere among team members.
  • Provides feedback and coaching to the team regularly.
  • Implements and oversees Edgewood standards which are adopted from Forbes Standards.
  • Oversee appropriate team behavior while they are on property.
  • Works with restaurant staff to ensure proper food presentation and proper food-handling procedures.
  • Ensures new products and menu are executed properly following roll-out with Chef de Cuisine.
  • Ensures product quality and continuous flow of service.
  • Is flexible in dealing with changes/problems (e.g., being short staffed, late reservations).
  • Effectively forecast restaurant needs.
  • Prioritize tasks effectively to ensure most important tasks are completed on time.
  • Seeks, listens, and responds to guest feedback.
  • Coaches team on how to anticipate and to exceed guest expectations.
  • Proficiency in using POS software and computer software to monitor inventory, track staff schedules and pay, and perform other record keeping tasks.
  • Verify total services receipts and balance sales, deposit receipts, and secure facility at end of day.
  • Check review sites such as Open Table, Trip Advisor, Revenant and Yelp for current guest comments. Respond as needed or as assigned by management.
  • Maintain detailed knowledge of the wine list, menu and menu ingredients.
  • Achieve operational objectives of Edgewood by preparing and completing action plans, implementing productivity, quality and standards of service.
  • Develop managers and employees by ensuring regular one-on-ones, training and development, coaching and performance evaluation.
  • Create an engaging and energetic environment where all associates work as a team.
  • Generate growth and restaurant sales through marketing initiatives.
  • Regular monthly P&L reviews with the Director of Food & Beverage to analyze financial metrics. Reviews may include other members of Edgewood management.
  • Arrange for maintenance and repair of malfunctioned equipment
  • Self-starter, flexible, and able to work independently.
  • Ability to multi-task, and change priorities constantly as needed in a fast-paced environment.
  • Manage restaurant supplies, china, glass, silverware, linen with monthly inventories.

  • Requirements

Qualifications / Special Skills:

  • The ideal candidate is a seasoned and highly effective restaurant professional with outstanding management skills and extensive hands-on experience and proven successful track record.
  • Minimum of 5 years with proven leadership experience in a restaurant setting is required.
  • Exceptional communications skills and commitment to providing excellent service to guests.
  • A university degree in hospitality, restaurant management or a related field with experience in opening is preferred.
  • Excellent computer skills including working knowledge MS Office, POS, Purchasing system, etc.
  • This position may require extended periods of standing including the entire course of a shift since hands on approach is necessary to effectively manage the quality of guest engagement.
  • Available to work varied shifts when needed, including weekends, holidays, and nights.
